Chai Spiced Pumpkin Loaf
- 1/2 cup brown rice flour
- 1/2 cup pea protein powder
- 1/2 cup almond meal
- 1/2 tsp baking powder
- 3 tsp chai spice
- 1/2 tsp salt
- 1 cup pumpkin (cooked and mashed)
- 1/3 cup coconut oil (melted)
- 1/2 cup maple syrup (or rice malt syrup)
- 1 tsp vanilla essence
- 2 eggs (or chia seeds if vegan)
- 1/2 cup orange juice
- 1/4 cup pecans (chopped)
- 1/4 cup hazelnuts (chopped)
- 1 tbs orange zest
Stir the dry ingredients together in a bowl large mixing bowl.
Whisk together the pumpkin, oil, syrup, vanilla, eggs and orange juice in a separate mixing bowl then add to the dry mixture.
Add nuts and zest to mixture and stir until smooth.
Pour the batter in to a greased loaf tin and bake in 175C for approx. 60 minutes or until a skewer inserted in the middle comes out clean.
Serve warm with your choice of spreads or toppings.
You can add some chopped Pepitas to your Hazelnuts for some extra variety.
