Tuesday brings us another simple to prepare recipe with just five ingredients or less. This is one of my household favourites, pumpkin pancakes. Not only are they easy to prepare, they’re free of any gluten, wheat, dairy or sugar. In fact, they’re completely grain free.
Paleo Pumpkin Pancakes
- 1/4 cup coconut flour
- 2 eggs (lightly whisked)
- 1 cup pumpkin (mashed)
- 1 tsp cinnamon
- 1 tbsp honey
Combine flour, eggs, pumpkin, cinnamon and honey in a bowl and mix.
Drop 1/4 cup mixture into hot, greased fry pan.
Cook pancakes until bubbles appear then carefully flip.
Serve with organic yoghurt and pumpkin seeds, or your favourite pancake toppings.
