This week we have a special treat for our readers, with Meg from The Wholesome Athlete promising us that these little balls of goodness are quite possibly her favourite invention ever. Ever!! In fact Meg forewarned us of the need for control when it comes to gobbling these pecan bliss balls straight from the fridge. So, you have been warned!
How can something so simple taste so good? Well you’ll have to find out for yourself! These protein balls of goodness are gluten, dairy and refined sugar free, easy to make and portable to take with you on the go.
Pecan Protein Balls
- .5 cup pecans
- .25 cup sunflower seeds
- .5 cup almond meal
- .25 cup desiccated coconut
- 2 tbsp rice malt syrup
- 1 zest of a lemon
- 8 medjool dates
- 2 tbsp coconut butter
- .25 cup desiccated coconut (extra)
Combine all ingredients in a food processor and pulse. Be careful not to over do it. The mixture tastes great with a few small chunks of pecans and dates. Alternatively if you don’t have a food processor, a hand mixer or blender should do the trick. Mix to desired consistency.
Roll mixture into balls, roll in extra coconut to coat.
Place on a layer of greaseproof/baking paper on a tray and place in the fridge until firm.
